I decided to give the we should cocoa challenge a go by choclette for the first time and this months challenge was chocolate and cheese. I didn’t want to just go for a chocolate cheese cake so i decided to go for some cream cheese and chocolate muffins.

They came out really good and i was worried they may taste a bit weird together but they tasted really nice and gooey. I would recommend them to anyone, the recipe i used was for 20 muffins but i overfilled mine and got 12 (6 large, 6 normal).

Cream Cheese and Chocolate muffins (

  • 1 (8 ounce) package cream cheese , softened
  • 1 egg , slightly beaten
  • 1/3 cup sugar
  • 1 pinch salt
  • 1 (6 ounce) package chocolate chips
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1/4 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/2 cup oil
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla


  1. In a small bowl, combine first four ingredients.
  2. Add chocolate chips and set aside.
  3. Mix remaining ingredients well.
  4. Fill muffin tins, lined with paper cups 1/3 to 1/2 full with this mixture.
  5. Drop a large spoonful of cheese mixture on top.
  6. Bake at 350(gas mark 4) for 20 to 25 minutes.

    These look really striking with the white and dark colours swirling about each other. They sound delicious too. Thank you for participating in this month’s WSC.
